An invitation to opening night at Red Drum in Kerobokan opened our eyes, and our taste buds, to the world of African-Caribbean fusion. The menu is yet another brainchild of the talented Chef Asier Arroyo of La Finca and many other popular restaurants in Bali.
We started the evening with a Congo baby spinach salad with roasted pumpkin, salty cheese and pumpkin seeds. The combination of salty, sweet and savory was a perfect introduction to the African-Caribbean delights to come including a Caribbean inspired papaya lime chili mint coleslaw with grilled prawns and a Tunisian lentil curry.
The cocktails were a perfect compliment to the menu and could even be considered as a stand alone all-star for a night of drinks (and African dancing) with friends. Concocted by self-proclaimed gypsy and a true genius mixologist, DeeCee, aka Dr. Cocktail, I couldn't get enough. Ok, well, 3 was certainly enough! An inventive and delectable combination, the Arawak cocktail was a crowd favorite with lime chunks, vanilla pod, orange bitters, palm sugar, and local spirits. The Calinagos cocktail was divine in its own right. Served in a small pineapple, this cocktail featured pineapple juice, sage, lime, Jerry Thomas decanter bitters, palm sugar, and local spirits.
The atmosphere of Red Drum was eclectically decorated with a mix of vibrant colors, traditional drums, and beautiful photography exhibiting different faces from Africa and the Caribbean. African music and lively beats from the stage tantalized the audience into their own dance. Red Drum is unforgettable and sure to become a favorite spot among the people of Bali.
